Abstract

On first inspection, members of the genus Vibrio are more notable for their ability to cause disease than for their potential as useful or beneficial bacteria. However, their diverse physiological properties and their prevalence in a wide range of ecological habitats has allowed a number of biotechnological applications for these bacteria to be developed. This chapter provides a summary of the main applications which have been commercialized or which are being developed as biotechnological products or processes.
