Traditionally, metabolomics in nutrition research is applied to fasting samples, and while such an approach has been successful, a number of studies are beginning to emerge where metabolomics has been applied to the time course of a dietary challenge study. Analysing such dynamic metabolomic data has been successful on two fronts: (1) identifying metabolic phenotypes in the predisease state and (2) identifying subtle metabolic changes following dietary interventions. This chapter gives an overview of the key studies to date with a focus on human studies.
